Basically, you'll want to wait with Grenth's balance until one of your teammates is taking a lot of damage and needs a big heal.. Infuse him and then find a target and do Grenth's balance. It should deal a lot of damage if done properly.
Playing off of that idea... you could go with a Mo/N doing the same thing, since Grenth's Balance is unlinked and being a Necromancer primary would not benefit Grenth's Balance much. This way, as a Monk primary, you would have more effective heals and access to Divine Favor. Infuse Health + Grenth's Balance is a nice idea, Kabale!
If you just want to be a monk with high(er) armor, I'd suggest going Mo/E and investing some points in Earth magic. Then you'd have access to Armor of Earth, Obsidian Flesh, Kinetic Armor, and Ward spells. Those would be a great supplement to your basic healer or protector monk.
EDIT: I just thought that Mo/N Grenth's/Infuse thing through a bit more... as a Monk primary, you'd be a primary target in PvP, so it might not be the best idea to do that... Infuse at the wrong time, and you won't have time to use Grenth's, as you'd be a very dead Monk.
