Lets say a monk has Spell breaker already cast on them (which is an elite). If Signet of Humility is cast on them will it cancel the enchantment as well as disable the skill? If so then this would be a sure sure way of beating a spell breaker team.

It wont remove the enchantment on them, and i'm fairly positive you can't even use signet rings on someone with spell breaker.
Best way to beat spell breaker team is to use the Necromancer's enchantment removal, which dont nessesarily target an enemy (chillblains for example kills spellbreaker).

Spell Breaker disables Spells that are offensive against target. Howeveer, since this is a sigent, it will not be stopped by Spell Breaker.
