Defensive Stance

Defensive Stance
For 10 seconds, you have a 75% chance to evade melee attacks. Defensive Stance ends if you use a skill.

What counts as a skill and what does not? Can I use Signets while in this stance, cast any spells? Is there anything I can do other than normal attacks while using this stance without ending it?

I do not know if this effects SoC, but it does effect any other skill on your toolbar. I'm assuming it effects SoC as well.

Anything on your skillbar counts as a skill- attack skills, spells, signets, everything. Using a Signet of Capture will end Defensive stance- basically, the only things you can do with this stance on without having it end is attack with your normal attack, or move around.
