So I am at a point in my game where I've created several characters, but lack the ability to play them sufficiently.
Thus leads me to you - Who do I keep?
I play the Elementalist and Mesmer. Their sister, the Monk, will be played. Which leaves me down to ignoring two of these next three -
The Ritualist
The Necromancer
The Dervish
Which do I decided to play (if any at the moment)
To Keep: The Ritualist or the Necromancer?

If you like elementalist, mesmer and monk... then it's a choice between ritualist and necromancer. Dervish requires an entirely different play style and if you're short on time then you don't want to concentrate on something entirely new.
(You could of course stop playing all the others for a while, and just do dervish.)
If the elementalist is your favourite character, then consider the necromancer for the soul reaping benefits. This will give you the energy you're used to having, but in a different way.
I'm not sure why you're playing your monk along with your elementalist and mesmer. If you enjoy the support role, you could look at playing the ritualist in a healer way. Or perhaps drop the monk for the ritualist in that case and devote more time to just three profession instead of four.
If you want a powerhouse like your elementalist, then consider the ritualist. Those spirits can be real mean, especially with the Kurzick skill that lets you move them along with you.
Of course, this all assumes you're playing PvE.
The other thing you could do is /age. See which one is closer to getting a minipet and keep that one.

as cyberjanet said, keep them all for the mini pets. I assume you have all the chapters which would put you at either 8 or 9 (depending on if you got the pre order with +1 slot) so you have plenty of space. If you like your mini pet, put it in your hall of monuments for gw2 or just tote it around with you. if you don't like it, sell it and make a quick buck.
Personally, I would go with the rit. Necromancers are cool and all, but I just prefer ritualist. I love the spiking you can do with channeling, or just go with spirit spamming to add some damage or buff the party. You can go with healing. You can even play a minion master with a rit. Also, I agree with cyberjanet. If you like to deal large amounts of damage with your ele, than you might prefer ritualist.
However, it really is up to whatever you prefer. I'd play both for a little bit, figure out which one you like best and go with that.
Also, I wouldn't delete any of the characters unless you absolutely need the slot. There's no harm in just keeping them to get the birthday presents. Most of the time, that's all eight out of ten of my characters do (although I do plan to play through the game slowly with every class... not sure how far I'll get though).

Considering I did invest time and money into them (2 of the 3 chars have multiple sets of 15k armor), I feel the need to keep them around. My Warrior turns 2 this month, as well.
Thinking about it, they're all melee that I rarely play, as it's a Dervish, an Sin, and my warrior. At least the warrior is useful as a runner.
I'm gonna go against the majority and say Rit. They're a fun class to play and I think the Necro has been done to death, and Dervish is a bit different from what you're already playing so it'd probably take even more time.
Also, don't delete any of them. Worst case is you use them for mules and get free minis. If you ever do decide to use them that'd be time lost if you have to start all the way over.
