N/Me is arguably the most effective combo in the game - When played right, It can easily take on any other class in the game
Warrior : Empathy, Spiteful Spirit, Spirit of Failure
Monk(regular) : Backfire, Any interrupts - Solo Monk : Any necro draining move
Ele: Same as Monk(regular)
Ranger : Empathy, Spiteful Spirit, Spirit of Failure, Cry of Frustration etc
And who can forget enchant stripping (other than me, apparently : hence the edit :P)

Well I don't know if this helps much, but i'll post my four builds in order of my favorites, and a short description. (All PvE)
W/R20 -- Fun to play solo, and by solo, I mean henchmen. Plus I can use my axe or bow, and choose to bring out my pet when I feel like it (which is a newly accquired Dire Black Widow
). It's just an overall fun build to play. Plus, I can use this character to run to a lot of places (not droks), which I frequently do for friends and fellow guildies.
E/Mo18 -- Fun to play... I picked Mo as secondary so that I can have some sort of buffer when the healer hench is dead or healing other henchies.
Me/Mo17 -- Same as above, still learning the ropes with mesmer, but i'm getting the hang of it. Able to complete Villany of Galrath with this char and only henchmen, without me dying (henches died of course, quite frequently too I might add).
Mo/W20 -- This is my character for playing with real people, I like to monk. I also use this char for UW team farming, my wife has an SS/SV necro. I don't do UW to get filthy rich. This character I use as a my source of money for all my characters. I have been able to use this chars farming capabilities to outfit my other three characters with good gear. Like I said, I don't want to get to the point where all I do is farm cash.

mesmer is probably the least played class, as many have said. a me/n is great for hexes and curses, and a me/mo is nice for quick rezes(NOT REBIRTH) mid battle(fast cast ftw)

Look at the bottom of the first post (mine) on this thread...there are the professions in order of frequency.

Though, that is with everybody posting all their professions.
