Fighting - Soul Calibur (DC) - I've never seen a fighter so polished and beautiful
Shooting - Perfect Dark (N64) - The single player was legendary
RPG - Chrono Cross (PS) - Great blend of genres
Strategy - Age of Empires II (PC) - Obvious reasons
Adventure - The Legend of Zelda:OOT (N64) - The greatest adventure ever?
Action - Ninja Gaiden (Xbox) - a flawless, gorgeous combat system

A reply to questionable AI

Yes, some games do have questionable AI, but it's worth noting that Guild Wars and the Diablo series are flaming tough, but they do reward you some way or another.
I have been playing numerous other games, and Majora's Mask has some very tough boss battles if you don't opt for all of the masks. Another game has been extremely tough to play and master... well a few of them are actually. The Splinter Cell series and the Ninja Gaiden series has a punishingly tough learning curve, and I have very almost literally thrown the monitor or screen just to vent my anger away.
In my eyes, about 10% of todays games are still tough, and even fewer are rewarding. Just get a copy of any of the games above and you'll know what tough is! :s

Yes... Yes it is.
Rogue is in my list but I should have put in Angband because I like a little more graphics with my gameplay.

To add to my list of great games, I've recently been leaning more and more over to the RTS genre....well always been to be honest. Starcraft ofcourse, is one of the big stars, but i'd have to give the cake to Epic on this one for making the Homeworld series, and particularly Dawn of War and WA. Yay for RTS's that dare explore other concepts besides villager and building spamming, and particularly economy micro managing. One of the concepts I admire Dawn of War for is the concept of controling your economy through managing your battles, rather than looking back to your base to make sure your civilians are doing what they're supposed to be doing.
