Honestly, I love different fighters from the 2D and 3D versions o fighting games. Personally I favor the Marvel vs Capcom series because I have the most skill playing that. But almost any Street Fighter is really good. Same goes for the King of Fighters games. I haven't played Guilty Gear but that's pretty good too. Of the 3D fighters I like playing most of the Tekken series, and the Virtua Fighter series (Anyone ever play Fighter's Megamix? With Virtua Fighter 2 characters and Fighting Vipers charaters.). My favorite 3D fighters come from the Soul Calibur series.
The thing to remember about the two different styles is that there are different strategies for how you play them. The 2D fighters generally have that "cramped" feel so as to bring the players closer together and to keep the action up. It makes for a different sort of strategy for opening up your opponent since they are right on top of your opponents. That is probably why I like 2D fighters better than their 3D cousins. In 3D the "openness" allows for people to be more strategic about getting position (although some games don't capitalize off of that as much as others).
Oh, and as for quality visuals, for the most part, the newer Capcom offerings, as well as some other titles (ie. Guilty Gear) provide far improved graphics over what you may have been preivously exposed to.
