What's been said is said. Neverwinter Nights (especially Hordes of the Underdark, good taste Marty), Baldur's Gate especially 2, Oblivion, Mass Effect (HIGH reqs though)...
Good to see Icewind Dale added to the list, as well. I'm gonna put Arcanum and Knights of the Old Republic on there. Neverwinter Nights 2 as well, but you HAVE to get the expansion, it's better than the original by FAR.

Add The Witcher to the list. Best RPG I've played in the last 2-3 years.

No. No. Don't. NwN 2 is a disgrace, the worst game with the words Neverwinter and Nights in the title. Plastic graphics, high requirements (I can run Crysis smoothly on Medium without too many hiccups and Oblivion on high, but I can't play NwN 2 on medium without stutters, I mean - what the hell?!), boring main quest, NO multiplayer support (all servers require expansion ALREADY - there are some non-expansion servers for NwN even today...), the only good thing is the music.
KotOR 1 and 2 are good, worth the try. Sudoki too, but it's jRPG so you might not like it.
Game Boy Advanced games - All from Megaman Battle Network 1-6, although you may skip 4th part - pretty mediocre. But you MUST player 1, 3 and 5. 1 is the first, so it's easy to learn there. 3 is the best, already finished it like 6 times. 5 is tactical, so if you like h/h'ing, you'll like 5th game.
Oh, and on GBA - Golden Sun 1 and 2.

I didn't see Diablo 1-2 mentioned. If you have never played them before, and don't mind HORRID graphics due to age, give them a try. I'll edit as I think of more. If you want a really deep story, go for Morrowind, I preferred the story in it far more than the one in Oblivion. Oblivion was good 'n' all but Morrowind, IMO, has a way better story.
Not sure if you are interested at all in console RPGs, but Baldur's Gate for the PS2 was really good, I think it had a sequel or two. Good story, it's possible to play completely COOP with a friend, and it has a good amount of replayability.
Fable: The Lost Chapters is good. It's generally only fun to play through once or twice though due to a linear story.
Vampire: The Masqurade: Bloodlines
I have it myself, and it's a golden egg of an RPG. It may be hard to get your hands on it, if you do get it you absolutely need the patches though, it's buggy as hell without them, and would explain why it did so poorly. So if you're thinking of getting it, get the patches ahead of purchase.

But you buy NwN's for multiplayer. What's the use, if NwN 2 has less servers than NwN? No arenas either, no roleplaying servers... Craptastic.

I mentioned it. Because if someone didn't try Diablo 2, he should have his foot cut off. And right hand. Left, if he's left-handed.

Not really an RPG... You barely can modify your character, at the end you can have every skill there is, you CAN'T run pure archer/warrior/mage, because it's super hard... Sure, worth a try, but don't expect too much. Oh, and you can play God knows how long, but you will end up as old guy. You won't have children, as developers once promised...
But I have yet to play Baldur's Gate 2. I've played the demo, watched my cousin play... Thank God it costs like $3-5 now. Where's the time it was $50...

Too late, already talkin' 'bout it : P
Yes, graphics are iffy (graphics were also pretty iffy with NWN, but more with look). Performance can be iffy. Main quest isn't too bad, but it's the personalities that are awesome (Neeshka? Awesome. Shandra? Cool, but sorrowful. Khelgar? Saweet. Bishop? Hells yes!) And while I wasn't excited by the original campaign, I've mentioned numerous times that it's the expansion pack that wins it. Cool characters, environments, topped with a much layered story - very good stuff.
It doesn't really "live up" to NWN, but I wouldn't say it kills it, either.

Baldur's Gate Dark Alliance? It was made for both the PS2 and XBox. But yeah, awesome game. Me and my old bud in high-school would play it to the wee hours of the morning.
Would be frickin' amazing to play the real Baldur's Gates on consoles, though...MP BG2 would be pretty sick. I'd probably miss the pause button, however, but these days I'm not that sucky.

The graphics are good, the game itself is pretty meh. For FPS , Good graphics+good story+good gameplay = Bioshock

Are you kidding? Crysis has some of the best gameplay of any recent FPS. Yes, the story is no Half-Life 2, but I can overlook that in almost every video game. If I want a good story, I'll go watch a movie.
Granted, Bioshock > Crysis, but Crysis > 90% of FPS's made in the last 3-5 years.

I would heavily recommend it to anyone who is a RPG fan. The second one was a bit of a dissapointment, but still pretty fun enough to play through. Also, it doesn't do too much of the hardcore DnD stuff like NWN if you don't really want to learn all of those rules
