Cantha is smaller and generally easier to map. It really just depends on what areas you have left. I'd say map all of Cantha, and when you can't get into Jade Quarry, go map Tyria.

The one thing to consider is your participation in arenas. Make sure you get to them as soon as you can, or else you'll be stuck like me .

It will take you longer physically to map Tyria as Tyria is a bigger area.
However, once you get close to the title on each, say 99.5%, you will find that it is easier to find the spots you are missing in Tyria than it will be to find the spots in Cantha.
I have a guide for Cantha in the Canthan Explorer's League area, stickied at the top. And you can get map checks for Tyria in the thread for Tyrian Cartography stickied at the top of this thread.
So as long as you don't get stuck finding the last few spots it will be quicker to go for the Canthan one.
I also have a thread that gathers people to explore the Jade Quarry in the Canthan section, it's not stickied but it usually stays on the front page anyway.

You can still get 100% of Tyria. Leeway has been built into the game. You just have to work harder on the parts you can get to.

working harder = uncovering more little bits of fog than you would have to if you were able to get into the arenas. I've had 100% in Tyria and Cantha for ages now and every once in a while I still uncover a little speck of fog.

Please people, stop giving out incorrect info. The arenas had been closed off for quite a while and if you were to check the sticky at the top you would realise that there are MANY people who get the GMC still.

You can still quite easily get the GMC title, the catch is that you have to wall scrape every where to ensure that you get all the cloud uncovered. When you reach 95% and get stuck, feel free to visit the sticky at the top and we will gladly assist you

Cantha is faster, and easier thanks to better henchmen.
I'm currently P99%, F100%, Nf100%
Just remember that you'll need some help for the Competitive missions (call your guildies to go there massively and kidnap the place, XD)

I actually found that Tyrian GMC was easier to get than Canthan GMC. Of course, Livingston has that truly awesome guide to Canthan GMC but overall Tyrian was still easier.
The reason I say this is because I got the titles on my assassin and used running skills to run almost all of the Tyrian map. You can't really do that in Cantha, their mobs being what they are, so you actually have to fight through 80% of the time. This may jus be an exception for assassins though, I don't really know any GMCs to compare mapping experiences :P.
Also, it may just be me, but mapping the Echovald Forest was a huge pain in the @$$ because a lot of the time I couldn't tell where my map was unfogged and where it wasn't.

The only thing about doing Cantha last (I've got Elona and Tyria) is that it is amazing how much faster the %'s add up than the other continents! I'm constantly pleasantly surprised when I scrape a zone expecting to get maybe .5% and end up with 1%.
But Melisande is correct, a lot more possible areas to run in Tyria, than Cantha. (Not just sins, Mo/R Spellbreaker ftw!)
