So i don't want to go cap Grenth's Balance on my warrior (might just run and do it though) and the Dwarven Hammer build just isn't cutting it.
Throw Dwarven Stability up. Throw Dwarven Battle Stance up. Interrupt all his Spirits, but not Ritual Lord. knock him down and Pulverizing Smash. Renewed Smash him, Stability is still up (barley), so I throw on Battle Stance again. Interrupt all his Spirits for the second time.
Now I barely have any energy (wishing i had Zealous rather than Sundering right now . . . ) and he starts casting them AGAIN. I have 10 energy, Battle Stance is worn off when this happens, and is still on cool down. I'm tottaly at a loss. He has to have like 200 energy, or as insane mana regen as health (which is enough that bleeding is at -1 tick it seems like rather than -3). I can usually stop two of the spirits (displacement and shadow) but then the rest start tearing me down and he recasts those before I can throw the Stance up again.
Tottaly flabbergasted. I don't have the rit skills necessary on this character (eg missing Displacement and a few others) and no Grenth's Balance. If ANET made it so you have to have one of these narrow builds that's just damn stupid.
Anyways, gonna tool around with it some more. If anyone figures something else out for Warriors let me know.
Edit: Woo didn't take TOO long to figure out a build that works for me. The other ones I tried tend to fail pretty early on but I've had a lot of success with the following build. It's easy to mess up the timing, and once you screw up its a slippery slope you can't recover from. So be ready to use your skills, but not over eager. You do it too early and you could mess up hard.

Basic Tactics: First four skills should (obviously for most) be used to disrupt the Rituals. Especially Displacement and Shadowsong. Flourish as needed so you always have Energy and an Interrupt ready.
When you interrupt 4 or 5 of his Rituals he'll start attacking you. That's when you pop the Dolyak Signet. Don't be too eager to keep it up, as sometimes when he is ready to cast a Ritual again he'll run away a bit to start doing it. With Dolyak on you can't get to him in time. Period. So only use it when he starts attacking you OR starts casting Rituals. Once he starts casting Rituals he'll stay put until he successfully casts one (99% of the time he did for me anyways, just a few flukes when he didn't).
If you ever find yourself at 400 health (I'm running a shield that gives me +30, and at the moment I'm rank 3 on the Norn Title Track) that's when you pop Soul Feast (Flourish if needed). Luckily for you there are 5 White Wolf Corpses courtesy of Sif. By the time the Griffon is half dead you'll have used 2 if you've been using your Dolyak appropriately, and successfully interrupted all his rituals.
Never forget to use Barbarous Slice. I find myself often waiting for when he'll start casting rituals again when I could use that skill. Not as much damage as Galrath's Slash, but close enough and it causes bleeding.
If you feel comfortable with it go ahead and drop Distracting Blow and throw Gash on top of the build, though the Deep Wound is negligable against this guy. It isn't for very much and your better off spamming Bleeding via Barbarous because of his HP regeneration.

Anyways, this is the closest I've been able to even come against this guy without a /Rt build (and I get him to 1/3 or less health then I'm out of Energy and he kills me). The Hammer build was okay, but I didn't have any damage output really. Hopes this helps other warriors that are as frustrated with the mission as I am.

Basically just pull him with a bow or get him to chase you a little and hit him with YMLaD! and the Virulence and Vile Miasma. He'll head back for his spirits which is fine. Hang around a little and he will start to chase you again and repeat. You can eventually pull him far enough away that being crippled he cant get back. He'll make a new set of spirits there, so you need to run to another clear area. If doing this you take some hits, use Restful Breeze. If he attacks you and you need a heal, use Healing Touch. When he starts to get low and/or you have the energy to spare and have alreay hit him with your first three, use Necrosis. I actually never used Pain Inverter or Prot Spirit, so consider them option slots.
I beat him using a Grenth's variant, took me awhile to tinker with it but eventually I got him. I was using a +5 energy vampiric sword, not sure if the vampirism made a difference but the +5 energy helps with spamming grenths and the interrupt skills.
Start off by interrupting his shadowsong spirit and every other spirit you can. With 3 interrupt skills you can keep him on his heels as long as you make sure to always have an interrupt ready to stop the shadowsong from casting. Then hit him with grenths while spamming deadly riposte to bleed him. Use bonetti's for energy gain to fuel grenths and your interrupts, and lions comfort as needed when his health is so low you aren't able to steal anything with grenths. Then when he's really really low, hit him with gash and the deep wound will finish him off.
any thoughts for getting this done on a dervish without going complete spirit spammer? i figure banishing strike would be a good place to start, but i'll have to get a bit further in nightfall to get that one...

Basically the build I used for Quansong, adapted to sword.
Wait it cast it's spirits, lure away from them, hex with Spirit Shackles, spam Parry and Ripostes, recover energy with Bonetti, hex again bla bla bla, dead griffon.
If you are using a /Rt build, and you still have spirits up when you die and the griffon is close to death, do not hit return to outpost, wait, you will still get the quest complete if it dies after you!!!!!
Necro Primary or even necro 2ndary can beat him with 3 skills.
[skill]animate bone minions[/skill] + [skill]blood of the master[/skill] + [skill]grenths balance[/skill]
Max out Death Magic, the rest of your points aren't really needed.
Summon 6 - 8 minions to surrond him so he can only summon 1 sprit. Keep yur minions alive with BotM and lowering your health. Use GB for damage until his health gets too low for it, then just let the minions finish him off. Takes about 1 minute, maybe 2 outside most.
It's actually very easy to beat him with that build. Keep him blinded with Sneak. KD the important spirits with BH (Shadowsong is a real annoyance, if he gets that up it's going to be running time.) Kill the bastard.
I had good luck running a R/N minion master build. I just spawned as many as I could afford and then just kept spamming blood the master to keep them alive (and kiting continuously). It seemed like he didn't cast any spirits because he was too busy with the minions.

long live the wammo, keep flail up, while you have fgj on do dlashes and kd when he gets up, w/o fgj do Dslash-> Headbutt ->hit ->Steelfang -> DSlash -> Headbutt... he shouldnt survive past the second fgj.
Healing skills are just there as a filler, you can probably do it w/ only one of then and bring enragins charge so he cant get ANY spirit up, for extra awesomeness you could get mending.
Used a variant to kill the bear and the same build to get my cup/skills from the norn tournament, kd is ftw.
go /R with a longbow. Take Barbed Arrows, Poison Arrow and a speed buff to lose aggro easily. You can even throw in Toxicity for a quicker finish. This is probably the easiest way to defeat him. Just remember, shoot kite, rinse and repeat, just try to keep the degen up @ all times.
