RA, TA, HA and GvG to me are obviously "real PvP" because you're fighting other players. What is "serious PvP" depends exclusively on how seriously you take it, not on the format itself (so most of the time RA would be excluded).
AB/FA/JQ are PvP or PvE, depending on how you play it. If you're fighting other people, then it's PvP. If you're running around in circles and nuking shrines, that's not PvP.

Don't forget festival games
Avalanche vs. Yellow Snow business is the only thing keeping Snowball AT's from being the far best PvP Guild Wars has to offer at the moment

Any arena that gives you random teammates or makes you fight mutliple teams at once isn't real pvp. In a team game the p in pvp stands for one organized team that acts as a unit, a single p. In arenas with random teammates it's more like ppppvpppp because what your team will be/do is unpredictable. In arenas where you fight mutliple teams at once it's more like pvpvp, this is bad because as soon as one team can no longer win they try to take down one of the remaining teams with them and ruin the competition for each remaining party(this is why teams wait till the last 2 minutes to do anything in the hall of heros: to reduce the amount of time the loser team has to gank them effectively)
That leaves us with GvG and TA as the only 'real' pvp in Guild Wars, you could also include competative pve missions but I'm not a fan of that style of pvp because the interaction is not between the players themselves but its through a medium of NPC's to see who can take advantage of them with the most efficiency.

Player versus player is when players fight each other. So I guess RA,TA,HA,HB and GVG are all PvP.
