Monk Weapon Sets
I know for monks, swapping out your weapons is extremely common and useful. What weapon sets are commonly used or very helpful?

Advice given to me, could be wrong at this point in time, but... here ya go
Prot staff - 40 HCT/20 HSR + 20% enchant
40/40 heal wand + focus
Defensive (+5/30 spear with +30 shields vs damage types. Anti cripple/ armor vs fire/cold/earth/slashing blah blah)
High set (+15/-1 wand and focus).

I would also add a -5 e/+15% spear too for an even lower energy set.

This is good advice. With the Ether Phantom/Drain Dellusions mesmers in the GvG meta at the moment, you want to have to ability to swap to as low energy as possible.

agreed for a standard WoH/Patient bar, however if you're playing pure Prot, such as RC, than the 40/40 heal set should be switched to something else.
and yes, I somewhat agree with the posts below this, so again 2 options:
for WoH/Patient bar, make the defensive set 15/-5 instead of +5
for RC(or other Prot) bar switch the 40/40 heal for a low energy set, can also use a negative energy focus item here.

I'm not exactly that good of a monk, but this is what I usually carry:
Weaponsets:
1) 20% 20/40 prot staff
2) Shield set (default: +5e +30hp wep / +10vs Slash +30hp shield)
3) 40/40 heal, prot or divine set.
4) high heal or prot set.
Weapons in inventory:
+10vs Piercing +30hp shield
+10vs Blunt +30hp shield
+10vs Cold +30hp shield
+10vs Fire +30hp shield
+10vs Earth +30hp shield
+10vs Air +30hp shield
-20% cripple +30hp shield
-20% daze +30hp shield
-20$ deep wound +30hp shield [possibly]
-5e +30hp weapon
+5e +20%ench weapon
-5e +20%ench weapon
20% 20/40 heal staff

Don't forget to grab a -50 health item and a vampiric weapon, preferably one with 15-1hp regen so you have 2 degen.
For those times people try to save you for after the timer, you can kill yourself fast and baserez.
Any smart team will snare a retreating monk and kill it after the 2 minute mark.

Having things like +60-3 hexed and +60 staves for fighting pure degen or etc. is also a noteworthy thing.
