MM works fine, and is a lazy mans selection. No real fuss or attention needed.
Haven't tried Derv yet but its could be interesting Maddog you got a build you would like to share?
If you too lazy and wanna get heaps look for someone selling them.

I run the Ft. Ranik Mission with my Warrior. I usually get 25 - 30 carvings per run (Killing the mobs by hand instead of using the catapults) and each run takes around 15 minutes.

Area of effect elementalists, dervishes, Glad defence and Rep/deadly rep on warriors, retribution on monks, whirling defence on rangers... all lovely for farming lvl 8 charr. lol. but any lvl 20 (messes kill slower, as they kill 1 at a time usually) should do well, any lvl 20 physical should 1 hit them.

Charr Carvings, amongst lots of other things, become tradeable at some new NPC's for Wintersday goodies.
This will be my first Wintersday but its anything like Mad King's during Halloween then there are various traders for lots of what would be merchant junk. My fave pick up was decaded orr emblems whilst Dead bow Farming on HM as it serves a dual purpose that way.
If you are set on Charr Carvings, I found the Nolani Academy an easy farm, just pull the lever, kill, pick up, reload. Even on NM I was lucky enough to get 100's of carvings plus black and white dyes whilst farming this as a R/E basic stoneflesh, shockwave etc build (can post details if anyone needs).

Back in the day I'd run the Great Northern Wall mission and fight the char that came to chase you.

I usually just farm the beginning of the Nolani mission. Enter mission with a solo farmer build, pull the gate lever, kill the swarm, resign and repeat.
I use to do this for Charr hides and dye back in the day.
