All of them.
2. Most fun professions
With the exception of a Mo, E, and D, I enjoyed all of them. Which one I liked was dependant on my mood of the day/week/month. I like to charage in and attack fast, or use skills that let me see a lot of numbers onscreen.
W - See 3. With good armor and good constant, non-stop direct damage, it fits my style perfectly.
A - See 3. Slightly less armor than W but still fits my style. Plus, I love going on a barrage with fast attacks and PVE A's can keep that up all day. With AP, I can spam my teleport skills to get into an enemy's face instantly... and spam this against every enemy. Only gripe is the pre-battle enchants on most of my A builds.
Rt - Spirits are fun to use. Especially when you see a whole grip of numbers onscreen.
N - As with Rt spirits, it's fun to see a lot of numbers onscreen. MM and SS both fill screen with numbers nicely.
P - See 3. While less attack skill spamming, I can spam the crap out of shouts and other stuff to pump up the action.
R - Can't exactly charge in, but still fun sending a barrage of arrows with Barrage. Toss in some support skills to boost damage and display even more numbers.
Me - Creating builds for Me's is the most fun and challenging than any other professions. Though this comes at a price... sometimes, I just want a general build that will be useful without me having to change build for every zone. Then again, PVE skills solved this problem.
2b. Least fun professions
Mo - I don't find healing fun. And smiting is boring.
E and D - Pre battle enchants really breaks my flow of doing what I love (see 3).
