Everything has a use somewhere. Currently, ritualists seem to be the popular class because of Signet of Spirits, Destructive Was Glaive, and Soul Twisting builds.
Monks are almost always needed. Mesmers have become more popular in pve lately due to recent buffs to Panic and Keystone Signet. Paragons are used quite a bit, but mostly for one particular purpose (imbagon). Necros are used for Mark of Pain and other physical damage increasers for Physway teams.
Dervs are fun, but currently aren't part of the meta for most places (though you should check out the Dwayna derv for use in FoW). Assassins are useable for farming and running and tanking.
You can always make a ranger or elementalist work in pve, though they have somewhat fallen by the wayside for meta teams. UWSC teams often use an ele for ether renewal bonder, though it's a thankless job. Nuking is more fun, but I'm seeing less and less of them out there.
Warriors have mostly two build types in pve lately: Hundred Blades and Earthshaker. Hundred Blades does a lot of damage when buffed by necro and weapon spells. Earthshakers are for knockdowns. Warriors, of course, may always be used for tanking, though some of the skills have changed since you were playing yours.
So, really any class can be used in any way you choose. but I think I listed what you are most likely to run into out there currently.

If you're planning to play mostly together with your brother a physical (Warrior, Ranger, Assassin, Derwisch, Paragon) is a good choice because one of you can take the more durable heores (i.e. Paragons) or heroes that need to be at the front (i.e. MM), and the other one takes the squishies. A human physical char is also able to deal an insane amount of damage which will greatly help you later in HM (Hard Mode).
In you don't want to join SC (Speed Clear) groups you can do pretty much any endgame content with at least one human fellow and heroes.

Since you mentioned Underworld, here are some PvX team builds for UW:
DLway -> 4.78 out of 5 (9 votes)
Physway -> 4.79 out of 5 (27 votes)
Terraway -> 4.92 out of 5 (5 votes)
Heroway -> 4.00 out of 5 (1 vote)
You'll notice that all of those builds have at least one Assassin or Ritualist, with Elementalist being common as an ER Bonder or Tank for full human teams, and Necromancer being the least common. So it's pretty safe to say that an Assassin, Ritualist, or Elementalist is needed for UW.
For general PvE, Ritualists and Necromancer are extremely powerful and versatile. Assassin would also be a great choice if you like playing a physical attacker or an Assassin's Promise Caller (which spams "You Move Like A Dwarf!", Ebon Vanguard Assassin Support, and "Finish Him!"). Even an Elementalist can be a good choice if you like to do lots of AoE damage from spell-casting range or if you like playing an Ether Renewal Healer.
But if you don't plan on joining speed-clear groups, I would suggest that you look into Paragons because Imbagons are extremely powerful from a defensive point of view, and the Scythe Spammer and Spear Spammers (such as this and this) can be fun to play also.

I would recommend you go back to your Warrior and help him out, however the Ranger has a very diverse role in both tanking and just dealing damage from afar, as well as interrupting which can also help your brother to interrupt.
A Ranger has natural +30 damage vs. Elemental damage, and additionally you can use that fact to tank, along with "I Am Unstoppable!" in areas where you're attacked from other forms of damage as well.
In addition, to not doubt the power of Mesmers in PvP. My secondary character is a Mesmer, and it was very helpful with groups, especially since Empathy would cast quickly and I could use interrupts against healers as well as elementalists who dealt heavy damage. If you get some experience at interrupting as a Ranger, you can help your brother interrupt as well.

I'd suggest making a rit. SoS is very strong if you want to deal damage, ST or Rit Lord spirits is also very strong if you want to do prot, you can run resto skills to keep him alive while he levels (you might need to level your rit solo then get a run to where he is if he didn't start his mes in factions), and rits are wanted pretty much everywhere.
