A/Rit
I have a A/E but what would you think of a A/rit or a Rit/A?
I understand there would be some issues around energy but this is for PVE, so questing and farming.

You're using your secondary in the wrong way.
Assassins, are a melee class, and therefore should deal damage.
Elementalists should be handling the mad stuff like Rodgorts Invocation ect.
And Rits should be handling the hardy stuff like Spirits, Splinter Weapon and Ancestors' Rage.
You should use these skills to synergise softly with your primary profession, if you're using your secondary.
Assassins can really go without a secondary.

I would have gone Rit/A myself. But then again, I like spellcasting.
If you like melee, then go A/Rit or A/E or even A/Mo. For Assassins, teleporting out of combat is key.
Ritualists have weapon spells and a hard rez.
Eles have conjure, armor spells, wards, and induce blindness.
Monks have protective spirit, judge's insight, hard rez, condition removal and hex removal.
