A Staff is equal to a Offhand/Wand in stats, so it's ultimately a choice of look. However a staff tends to be cheaper, since it's only 1 item, while a Wand and a Offhand are 2 items, they tend to be more expensive, unless you got cash to blow, go staff. Enchanting is a good mod, if you have lots of enchantments on your build, obviously, if not get a +30hp mod so your slightly harder to kill, because the team tends to suffer more when a monk dies.
The Mo/W are mainly solo farmers, the sword/axe/spear are the only 1 handed weapon that provides an 20% enchanting bonus, because they need the -50hp focus offhand, but since solo farming has been nurfed, you'll see less of these people.

Hmm...well if you plan to be a healing monk there is one obvious choice for a weapon, the Scar Eater, it's a green monk weapon which is ideal. I personally prefer staffs over an offhand and a wand because its simply cheaper. You should be able to buy the Scar eater for about 8k in a good trading town and its a very common thing for people to sell.

I use a 20% enchantment axe on my monk.
Main reason: it has an unconditional +5 energy, which is better than any wand.
Since I'm monk, I don't use the weapon.
Any off-hand/wand combo or staff will work for you as long as you meet the requirements.
For starters: grab a good staff to start with, those provide energy without requirement.
Just any max energy ( +10 +5 ), the cheapest greens are around 1K.
For more energy, get a Nightfall staff, put +5e head on and a +5^50 inscription.
Energy is more important for monks than weapon damage.

Honestly having a high energy pool is not that useful. I would much rather have more armor or more health, and less energy. So long as you don't over heal and manage your energy you don't need a ridiculous amount. If memory serves my main set is a +5 / 20% Enchant and a +16 AL / +10 vs Piercing / +30 HP Shield, the only reason I even have the +5 on the axe is due to the lack of any other useful mod.

ok, to put it short;
preferable you should have:
a sword/axe/spear with - energy & a shield
a sword/axe/spear with +e energy & a focus with + energy
a wand & focus with halves cast/recharges on both
depending if you run many enchants, have +enchants duration, if not either +armor or +health
