Echo, Inspired Hex, Blackout.

Echo has so many uses.
I love being Me/E and throwing a Necro hex back at them.
Blackout is the quintessential Mesmer skill.

If there were more signets I'd say Keystone Signet, too. Fevered Dreams is nice but I haven't found a worthy build utilising it. They sound so all-powerful! Powerblock, Backfire, Distortion, Surge, IW, Guilt and most of the Mantras are also favourites.
Conjure Phantasm and Empathy have been etched into me because they are learned early.
