I've always been a big fan of boon-prot. I like the quick heals combined with extra protection. It's quite versatile, though as mentioned, energy can become an issue if you're not careful. I've also tried a 5 energy healing build, and whilst you can go for longer I just don't seem to feel comfortable with it. Probably because I'm so used to boon-prot!
My boon prot build varies from time to time, but here's one that works well for me:
Mo/Me
Protection: 8 +1
Divine Favour: 12 +2 +1
Inspiration: 10
1. Guardian
2. Reversal of Fortune
3. Mend Condition
4. Signet of Devotion
5. Inspired Hex
6. Mantra of Recall
7. Divine Boon
8. Rebirth
The energy's good with inspired and recall, plus I use the sig for maintenance heals to save on energy too.

Honestly, I've been a Boon Prot fanatic since I first got Divine Boon (like day 2 after release or so). The reason really is the speed of it. A one second heal just doesn't compare to a 1/4 second Reversal of Fortune that ends up healing for MORE than the one second heal. I kept waiting and waiting and waiting for the Divine Boon nerf to come but it never did.
PvE is very forgiving so either spec will work......but I've always found it best to have 1 Healing Monk and 1 Protection Monk in a group of 8. Reduce and heal

Hooray! I just got Life Barrier today, after the 8th try. I'll try your Reversal of Fortune suggestion. I still don't see the superiority of Rebirth over another rez, when bonding. If one is maintaining enchantments and the skill wipes your energy to 0, it's risky to have your enchantments get wiped out. I can see it better in the thick of battle, with consistent energy intake. Also, does it matter to put Bond or Barrier up first for the benefit of damage reductions? (Is there a difference?) I don't see Divine Boon in the line-up, but would it be a good idea to have it in there somewhere? Oh yeah, I guess the idea also is to reduce the need to place points into Healing attribute and beef up your Protection and Divine Favor attributes. See...learn something all the time!
Dang, I wish you could have like 10 or 12 skills in your bar instead of 8!

This is the build I played pretty much thoughout all of Factions. Normally, I would only use and elite energy management in PvP and prefer something like Restore Conditions, but some battles in Cantha are long and I like the healing staying power of this build. I even run this build when I hench with the healer hench and protection hench (hench seem to prefer to heal themselves instead of me, so mostly I protect myself and just make sure none of the hench die and give them a chance to heal themselves first).
Divine: 11+3+1=15
Protection: 10+1=11
Inspiration: 10
1) Reversal of Fortune
2) Guardian
3) Mend Condition
4) Inspired Hex
5) Signet of Capture
6) Divine Boon
7) Mantra of Recall
8) Rebirth

Since I like to keep only 10 or so enchantments up at a time, I prefer Blessed Light instead of Life Barrier and Mend Ailment/Condition. If I were to run 7 Life Bonds, 1 Balthazar's Sprit, and only 2 Life Barrier, I feel Blessed Light is better than 2 Life Barriers. However, there are times when I prefer Life Barrier, but I ditch Life Bond/Balthazar's Spirit in that build. I also like Signet of Devotion for the free heal instead of Protective Spirit, but I haven't really tested Protective Spirit in Cantha much.

You don't necessary need boon in a protection build.I don't have my monk in front of me but mine goes something like this
Healing 9
Protection 13
smiting 1
Devine Favor 9
Tactics 4
1.Revevsal of Fortune
2.Life Sheath or Shield of Deflection
3.Mend condition
4.Healing touch self heal
5.Protective spirit
6.Aegis
7.Bonettis' Defence or Watchyourself
8.Restorelife.I prefer it over Rebirth as it doesn't drain your energy .
