And so enchant confusion begins....
With the addition of the dervish, it will be very hard to figure out which enchants to remove from the dervish at which time, as many of their enchants have effects at the end (such as crippling, bleeding, or blindness). Now how will us friendly mesmers tell the difference between that armor increasing enchant (ex: conviction) and a hurtfull enchant (ex: Dust Cloak)?
And so the confusion (and flaming) beings......

The Enchantment handling NF elites we got are pathetic. Least Mirror of Disenchantment is great but not really usable against Dervishes. Shatter Storm might, however, become more popular; it's ability to keep up with the spam might prove useful. Lyssa's Balance is always good, if you don't get chanted up much, attractive with its low cost and recharge. Drain/Shatter Ench are useless vs constant chant spam. I think our best bet is to try to counter the chant spam indirectly through Diversion and the likes. But Necros seem way more equiped versus D-s and Me and Ne are known to often borrow stuff from each other.
But to answer your Q, we will have to do what we have always done- learn the ins and outs of the profession and find the weaknesses to exploit. Focusing too much on which chant to remove seems counterproductive. I am not suggesting to remove all regardless, I am simply saying that no1) Necros are better geared to counter D enchantments, and no2) Me don't really need to use any chant removers (even if we needed to the options are limited and they bring us back to no1), we can simply utilize Diversion, Blackout, and all the other similar piss-people-off skills we got.
I never wasted a single chant remover on a D- it's not worthwhile, unless you can keep up. But I did kill many Ds with the above mentioned and Backfire, Soul Barbs, and many other wonderful and sadistic techniques.

I find it a little hard to memorize the dervish skills; somehow the icons have been confusing. With the advention of many enchantment related skills I guess we will get to learn to deal with dervishes. Tease on the other hand won't be that effective against them imo, since they have many area damage and you'd get hit right away. Diversion is still a safe bet. Drain/shatter an enchantment before a signet of piety is good as well. It's just a matter of time until we get used to them, we did with assassins, we must do with paragons (and their utility as spike power ups) and we certainly will get used to dervishes. I still think that after this events, paragons shined the most.

Just remove them all! It's not like monks that they have cheap enchantments like Reversal of Fortune.
But yes...Dervish's skills are hard to identify. But the best way is to look for the yellow up arrow, you'll know that is an enchantment and you'll need to interrupt/shatter it.

This is just what I thought. I think Shatter Storm [E] will be my best friend for awhile against them.
And a thing about for your question, if you see caasting an enchantment, check the animation. It will know what is the enchantment the dervish casted. This is helpful to know the animation of the caster.

I'm just wondering whether Power Block can actually shut the dervish down for a couple of seconds. Seeing as how they usually center their enchantments mainly on 2 attributes, perhaps 2 strikes of echo-ed Power Block can shut most of their skill bar?
Just a thought though...
EDIT: I forgot they actually bring some Scythe Mastery stuff... in this case i just do the usual empathy kite.. i know, i suck at PvP

Uh...no...Power Block will not shut down dervish...because unlike other classes, they use skills from multiple attributes.
Now...Blackout!! This baby works on anything
But still, i don't think any skill will shut down Dervish...their normal attack already hurts so much, their enchantments hurt even more. You'll have to blind AND interrupt them to work.

Dervish..still have to get close to hit ya.So slow em; degen em. Hard to say for sure just yet till we see most popular derv builds..But all this talk of dervs being anti-mesmers...puhleeese stop it. Mes are the smartest players in the game ( or at least should be,so we shall adapt and overcome.

Oh...spirit shackal...work again enchantments...but still their normal attack still hurt a lot even without those enchantments.
W/D with primal rage!! only they run so slow and can't hit anything...

You're right, didn't notice how most of their spells have near-instant casting time...
By the way I also used Signet of Midnight to Blind an annoying Derv who used to chase my butt to oblivion... using the Sig and Distortion significantly improved my survival rate
Thinking about Shatterstorm here... but the stripped enchantment could possibly unleash a lot of conditions to our teammates
But most of em lasts less than 10 seconds anyway... so i'm thinking a simple "Oops! Sorry!" could suffice...?
Sooo... Sig of Midnight + Spirit Shackles + Spirit Shackles?

Shatter storm is useful if the Dervish isnt beside one of your teammate. I'm sure they will up their enchantments before entering in the mobs so, we shatter here and spam Diversion soon after. I dont' care if they heal or not for each enchantment on him when finish, it just a waste for their energy management right at the start of battle.
I wonder why people started to cry to fear about Derv. They're nothing! They just like another profession but Ecnhantment based style.
And for Scyth mastery, Empathy = 3x when hit 3 teammates. Shackwack is always a good sign too...... in some case.
