How good is a three atriubute Mo/E
I'm been playing today and I have realized, I enjoy doing damage, but I also enjoy doing some healing...
Would it be possible to do a three atribute Monk/e with smiting as one of them?
I know it's better to specialize, but I'd still like to do a little bit of healing, used for soloing or just helping out some.
Can I just rearrange my points and skills when ever I want, to fit the job?

Three attributes is the normal amount, so I'm not sure what you are asking.
So you want to Monk/Elementalist with Smiting Prayers, Healing Prayers, and one elementalist line?
Be more specific.

In a lot of the healer builds, 2 leveled attributes is normal like this one:

And yes, I want leveled smiting, healing prayers, and one elementalist one... I'm asking if this would be wise, and if it isn't a problem what's the best elementalist line to go with so I can do damage, or if best, help with energy.

well, this build is only for PvE i assume, as PvP noone will want a healer who isnt concentrating on his own team, or a damage dealer with a lot of heal spells limiting his damage output. However, im going to make this into some constructive ideas instead of just saying what everyone says.
If you want to deal out damage, you dont want to be looking at your own team's health bars all the time, so the monk line that i recommend you go for is protection. grab a couple of defensive enchantments etc. and power up a) divine favour b)protection magic and c)whatever ele line you wanna take. Divine favour will give your protection spells a healing boost, so you could take something like reversal of fortune to give someone a nice little health boost etc.
The main reason people say dont heal and damage deal is because they are two very different styles of play. I know that when im playing a monk, all of my concentration is on the health bars of my teammates, not where they enemy are or what they are doing. I remove conditions/hexes/heal according to those bars. When im my mesmer or ele, i spend my time seeking out the best enemy target with the team and smacking them down. They are two very dissimilar areas of concentration, so its often a bad idea to take both. just try it out, and if it works for you, then ignore this post. its what you like that matters!
