Best place to get Cleave is the Ice Caves of Sorrows mission right outside of Droknar's Forge. Enter the mission (you can do this part solo), and a random stone summit boss spawns right at the beginning. If you keep going in and out of the mission, eventually the boss with an axe spawns (you'll be able to tell right away), and you can capture it from him.
Eviscerate is only available in the last mission of the game, Hell's Precipice. You get it from one of the bosses that appears right before the Prince (I won't go any further because of spoilers). You'll notice him using it...capture it from the boss right near the wraiths. |

IIRC you can also get eviscerate from a dwarf boss in SF.
