Alright.. I know the standard build is the monk/warrior with hella smite, healing and maybe a bit 'o prot. Thing is, I happen to have a mesmer monk. Would the best idea for griffin/etc farming be to use lots of healing/smite? Or is there a better way to incorporate the dom/mesmer skills? Or... is this not possible?

Hmmm haven't tried this, but it might work...

Arcane Echo
Shield of Judgement
Balthazar's Aura
Balthazar's Spirit
Prot Spirit
Physical Resistance
Healing Breeze
Channeling

Something Like:

Smite: 12
Heal: 8
Prot: 8
Inspiration: 7+3
Fast Cast: 1+1+3
Runes/Equip to get to 55 or 105 or whatever you please.

Have a constant SoJ up and cast BA as much as recharge allows.

Balthazar's Spirit and Channeling for Energy management and keep Orison going to keep energy up.

Physical Resistance to keep damage WAY low when combined with runes to drop health and Protective Spirit

Don't know if it would work but looks good on paper...

Ah, finally an Me/Mo concept. I've tried running a modified version of the standard, throwing in Physical Resistance rather than Prot Spirit (couldn't think of anything else to swap out for PR), and it really kinda sucked in the desert.

I'll give this one a shot as well.

i would take out the physical resistance, since u will be taking 1's anways, take out shield of judgement too...here's the kicker: replace it with that fast recharge skill for mesmers. then just super stack auras and symbols of wrath

well, I haven't tried it just yet as I need to go cap SoJ, but you might have a point on the PR and 1's. Hmm.. Mantra of Recharge (I forget it's exact name) + Arcane Echo + Balthazar's Aura...
