Mez are always dangerous if their spells are situated against YOU.
This is a team game, you shouldnt be going at him/her solo, and you should DEFINATELY not be going at him/her solo if she is setup to just utterly destroy you, your strategy was lacking in your PVP matches.
Mez have among the fastest kills doable if you go along with what they want you to do, remember that.

Mesmer is deadly if properly played. I guess it's the most powerful class in 1 vs 1 competition with all those interrupts, hexes, energy drain and disenchanting.

I know 2 times it happened. The first made since because she made it were I couldn't move fast and got her distance. The second time amazed me. Before they were always considered to me my easiest target. I would always go after one if I saw it to take it down and make the fight 4 vs 3. I am a 20 w/ 80 level armor and she was a 20. I am wondering are their mesmer skills to counter melee and mesmer skills to counter casting? Is it that some mesmers only carry casting counters because of the room on their skill bar? Its just weird they seem easy to melee and this one destroyed me 2 times.

That's probably what baked your cake right there. Watch out for the icon that looks like a sword on your debuff bar. Nothing you can do about power spike though She'll just use it when you get low and try to heal, and then you're pretty much done for.

Yup, there are definitely anti-warrior and anti-caster spells within mesmer. Did you miss alot? Would you miss and take damage? Were you being hit for large amounts, could you build up energy? Could you get adrenaline? These are all things the mesmer can control. With sympathetic visage on the mesmer you won't be able to charge up your adrenaline nor build energy while attacking, and at that point the mesmer can probably toe-to-toe you and shutdown your healing spells, using big DoT, empathy and so on. Might even have shattered your enchantments off if you were using them. Mesmers are nasty if played right, and can be suited to shutdown almost anyone.

I think she shattered my enchant which is huge. I put live vicariously on myself which at the moment gives me 10 health points each time i hit (eventually planning on moving this up to 11 when I get more attribute pts from those two missions). Anyway, I combine this with 100 blades. A lot of times it works extremely well. If the enemy is grouped close together I feel about unstoppable if I get like 60 hp each time I use 100 blades plus adrenaline. But she shattered that so now I am hurting. But I bet I kept on doing 100 blades and was hurt by it. I did miss a lot. One thing that was weird she did was every item on my skill bar went black and slowly went back to normal. Very strange. I was extremely impressed with her skills although I think I've learned and would fight things differently this time. I guess I was used to running mesmers over and figured I would her w/ just brute force.

Yep, that's the other thing... not only does the mesmer spell shatter enhancements, but causes damage too. In fact, a mesmer specced for pure anti-melle is VICIOUSLY evil. (She knew that, so all 8 skills were stacked against you. IF you even got a hit in, you did fine against just the domination anti-melee skill set):
My favorites:
Empathy - damage is returned to you when you deliver it.
Power Spike (or even better, the elite Power Block skill) - Spell interrupt
Diversion - Once you use a skill when this hex is placed on you, it takes up to 45 MORE seconds to recharge... lol, I love this one.
Shatter Enchantment - not only gets rid of enchantments, but damages too.
This is but a small handful.
BUT, mesmers can be beaten, because they NORMALLY do not know what they will be up against, so they cannot over stack on any one thing.
But to answer your question, yes... IF a mesmer has you targetted and has stacked the anti-skills you have... you are dead (one-on-one).

Ah - she used blackout to take out your skills. She probably had hexed you with Spriit of failure if you were missing 25% or so (and giving her as much as 4 energy per miss), maybe using some others like clumsiness in between, or if you missed a ton (90% of the shots for a while) you got blinded by a skill like inneptitude.

you know she might have built her anti melee mesmer from the fact that there is a high percentage of pally's in random groupings and that they often go after a mesmer thinking he/she is more anti caster and easier to kill.

Maybe she was using Illusionary Weaponry? IW ignores armor so it is especially good against highly armored warriors. I can attest from first hand experience that it was not fun being chased by a mesmer using IW and blackout.
About the only you can do at that point is to a)Rend her enchantments or ask someone on your team to do it or b) Hope that she did not bring a snare and kite her around and wait until the IW drops.

See, this is the very reason I chose Mes as my second to Elemental. Very powerful debuffs. I keep Empathy and Backfire in my skill bar at all times, just to be on the safe side and those are early-game skills. Beef up Domination magic and one can make short work of nearly any single foe.
Hint: it's those stinking "group hugs" that give me the chills.

Speaking as a Mes/Mo (and I consider myself a good one)...Mesmer is the deal breaker. You can make it so many ways. Myself? A pure domination mesmer.
1. Empathy (Damage for every attack over a long period.
2. Backfire (Tons of damage for each spell over 10 seconds.
3. Shatter Delusions (VERY quick spike damage, remove a hex and deal 60+ damage
4. Energy Burn (Lose 8 energy, take 72 damage
That's my core. Backfire/Empathy seriously weaken ANY character, then Energy Burn+Shatter Delusions to spike them out, which is very quick damage. Put on top of that another skill..Shatter Hex is crazy in team play against an opposing Mesmer, Chaos Storm is decent..the counterspells are not bad but too reactive for my taste. Lots of options. Shatter Enchantment is tops with the Wa/Mos running around these days however...
Maybe Shatter Delusions isn't that good actually. Hmmm...I might try replacing it with something. It's good for finishing off Monk-types
But what I'm finding more and more in PvE AND PvP, is that the Mesmer, and the quality of said mesmer, is the difference between a good and a great party.

i think the point of shatter delusions is to cast any hex on them, and when it is almost over, cast shatter delusions on them. It gets rid of the hex, but since it is almost over, it doesnt really matter. the good stuff is that it deals large amounts of damage.

Im a ranger and what troubles me the most are the mesmers Spirit Shackles...
Since ranger live on energy and have only little of it draining that much extra energy per attack leaves them almost useless...

I am very surprised this was your first one.
As a Me/N if I am prepared and get a few spells in I can take a warrior most of the time. But if I'm not prepared I just run like crazy. And this is with a mixed build meant for warriors or casters. And I've been on all mesmer teams that have had no problems with warriors (it's rangers that mess us up).

Me are deadly. If they know their class and are setup to defeat you, don't take them solo as a W/Mo or any melee. Make sure you have backup. Empathy and Backfire........ouchie.
