Honestly, I play my Ritualist all the time (It's my main character) and have come to find you really need at least two to three solid builds for him/her. There are times I can spirit spam all day and be the best support in the world, but then there are times there are some serious nukage that takes your spirits down in a few seconds. You won't see me spamming spirits much to be honest, unless I'm in EotN needing to tournament farm or something of the sort.
I typically run an Offering of Spirit build when I have nothing else to use, personally though, most experienced Rit's are good enough with energy management to not use it. My biggest tip is to actually run an Offering of Spirit build to get used to casting within energy, that way if you blunder you correct it and keep pushing. Eventually you'll find yourself not wanting to use it anymore just because you got it down to an art. Don't mind the 17% sacrifice, that's nothing in PvE, however, don't bother using it in PvP.
Nowadays I'm using Xinrae's Weapon as an elite, couple of reasons, not only is the life steal there but it's the 5% max damage. I can't tell how many Luxons I've pissed off by just sitting there and spamming it on tanks attacking turtles in Fort Aspenwood. It completely nullifies that giant blow, nevermind the fast recast Xinrae's have... Weapon of Remedy is the same thing, it just depends on what you want more, condition removal or spike protection.
Pretty much just reiterated what Maria said, but whatever. I just see OoS as training wheels, it's a good way to start. =)
