-As mentioned the General Campfire Guidelines, it would help if you posted where you're up to, what you're running now, whether you're having issues in any specific area, etc. If you don't provide us with much info we can only give generic advice.
-Try reading the sticky. Some of the skill advice won't necessarily benefit you but the theory is as solid as always.
-If your primary interest is to run damage, Monk probably isn't the best choice. Smiting tends to be poor in terms of raw DPS. It's best used for support purposes - the skills worth using are ones like Smite Hex for cleanup or Strength of Honor for buffing allies. The direct damage skills are generally terrible, especially in comparison to Elementalists and such.
-If you're looking to run a heal/prot build there are three things you'll need.
--Damage mitigation. Preventing damage is always better than healing. While some skills like Heal Other may look impressive, prots like Aegis and Protective Spirit (and Shield of Absorption if you have Nightfall) can (and will) prevent several times as much damage, potentially 500-1000+ in tougher areas.
--A few heals. Don't have more than three as they become redundant. Word of Healing is ideal but you won't get that until later. Dwayna's Kiss is a good option because of it's low cost + recharge and relatively high amount of healing.
--Energy management. This is as much about using skills wisely as it is what you put on your bar - a skill slot spent on energy management is a skill slot not spent on something keeping people alive, so make sure you find the right balance. Glyph of Lesser Energy is good because it doesn't require any attribute points. Some Mesmer skills like Power Drain and Leech Signet are also reasonably alternatives.
I'll refrain from being overly specific, but if you follow those principles you ought to get through without too much trouble.

I'm in the Amoon Oasis, I'm currently healing because as you mentioned smite isn't realtively strong and I found this out the hard way. But the issue im having is the creatures are overwhelming my healing. I can keep the henchmen up long enough for them to survive

Are you calling your targets? This might be a basic thing you're already well aware of or it's something you might have overlooked, but if you hold down Ctrl and then hit Space while targeting an enemy it will "call" the target and your party will focus on attacking that enemy first.
This is a fairly standard damage-concentration principle in video games (especially in genres such as RTS and RPG), that it is best to focus your fire to kill individual enemies as quickly as possible, thereby reducing their damage output sooner.
The only reason I mention this is because the Crystal Desert has fairly small mobs and I imagine that perhaps your party isn't killing them fast enough, thus they overwhelm you - and that could be a result of not calling your targets.
It does conflict a bit with the monk's focus on healing their party but does remain a necessity even if you yourself aren't attacking - your AI teammates need the direction.

The Desert is a really rough zone for a lot of people; the Mobs are pretty fierce and you have a short handed party; its really the first place in the game you really need a lil more skill and cant rely on just player toons being better than AI toons.
I usually suggest to people they look at the local Henchie builds to see what a reasonable build would look like. But with the Monks not so much, they have built in flaws like Alisha's touch Rez; I believe this is on purpose. Have you got to Thirsty River, its a good place to Cap skills including Word of Healing, you can also cap that at Elona's Reach; its a powerful healing spell; the one used by the Forgotten Sages. It might help a lot.
As to party build, I would also suggest Taking the Ranger instead of Any Wars; and probably a Mesmer Henchie as well; Im sure you noticed by now the War AI was programmed by Leroy Jenkins himself and Wars are terrible Agg magnets; you really decent agg management in this zone; or you will be overwhelmed.
I'm on a good bit, mostly farming right not with the Holiday Event. Ping me if you see me. I'll help you with those skill caps. BB IGN: Claudia De Anar.

It all depends on what you are doing when it comes to the desert.I would suggest start being hybrid heal/protect there are a lot of ideas in Devine's thread and it still relevant. You want to keep holy viel on your bar as for diversion.
The best advice is to get run to all the towns and outposts and try and get run on Elona's mission.I would go to LA and get some help on this.Don't let the Ghost die in any of the missions. The desert is hard for a reason because after this comes PvP in which back the good ole day of Temple of the Primevile King aka ToPK was the Halls of Heros. This is why the missions are harder and timed just do some practicing.Watch some videos.
I can't advse on build as I am not sure what you are good at even so it won;t get you through it.It is your playstyle as a Monk keep you eye on the radar for red dots.
The best way to leanr the role was to do Altheas Ashes over and over and be the only Monk in the party.
