Mesmers have pretty much everything they need within their native skill repertoire, and so don't really need to rely on a secondary profession for much. That being said, there are a few secondary professions that can be useful. Bear in mind that the mesmer primary attribute (fast casting) affects all spells and signets, not just mesmer spells and signets. This could make any spellcasting profession a good secondary.
Me/E is the secondary that my mesmer uses. Glyph of Lesser Energy is excellent energy management until you get some of the better options from the inspiration magic line. Plus you could also use this secondary to be a fast-casting nuker, which is rather fun (though not as effective as an E primary).
Me/Mo would give you access to some condition removal spells, and the ability to use a hard rez (the long casting times of hard rez skills are brought down by fast casting).
Me/N or Me/R is a third possibility. Necromancers and rangers have many skills that allow them to inflict conditions (although rangers need a bow equipped to do this, which requires you to sacrifice the bonus energy and spell casting/recharge bonuses that you would find on caster weapons), which work well with certain mesmer skills that allow you to manipulate the conditions that enemies are suffering from (Fragility, Epidemic, Hypochondria, Fevered Dreams etc). Rangers also offer Serpent's Quickness, a useful skill that lets your skills recharge faster as long as you can keep your health above 50% (which can tide you over until you can cap Mantra of Recovery in the desert).

I went Me/E for GoLE, but going /mo is just as useful when using a hard rez.

If you are going for Legendary Defender of Ascalon, go /Mo. Otherwise /E

I'd go with:
Me/N
Me/Mo
Me/E
In that order.
Condition removal and synergy. Hard rez is not necessary. Glyph, I think, isn't as good as the Mesmer's Inspiration Magic line. It may be better for PvP, but not necessary for PvE.
Of course, this is my opinion.

That's true, but it can take quite a while before you start to get the really good inspiration skills for energy management. GoLE, on the other hand, is available practically from the start (available in pre-searing) and can still be combined with inspiration skills later on for even more powerful energy management.
