The armor is supposed to color differently even with same dye mix, it's just "realistic".
Dyes go very differently to metal surfaces than they go onto cloth, and on leather surface it looks different again.

whats the use of the dye mix charts / guides if the dyes don't even look consistent when put onto armor etc?

I think the dyes are ok; I just hate that it's rather expensive to test things out.

I think. I had a problem with trying to dye my new Kurzick armor the otherday. Some guildies suggested I try Yellow Blue Blue or something, to make a lightish aqua color. It workedon their sets (all cloth armors) so I tried it, and it was a nasty tannish brown color.
I also want to be able to know that the dye combo that worked on one set of armor won't show up looking awful on another.

There is no ANet issued dye mix chart last I checked, only ones out there are community works, and in no means official.

What Anet ought to do is have something in-game, that would show your character (like if you used Z key to or moved camera so youre looking at them from the front), with armor pieces at right(as on inventory screen).
Heres a(really bad) pic of what I mean.
You would be able to see dye changes in real time, WITHOUT ACTUALLY USING ANY DYE! It would be like a "preview" of how armor would look with a certain dye. All the dye charts and stuff are great, as well as the in-game screens, but if someone has a lower(or higher) end graphics card, or one by a different make than the dyed armor screen, it may very well look different, and not in a good way. This way(using in-game preview), you could tailor it to the individual user, as well as allowing them to find any oddities. I myself (just to be rid of them) dyed 2 pieces of armor te other day, I had used the same mix on a piece of my old armor and it was a yellowish color(mix was yellow and green). But when I did mynew armor, it was VERY obviously a shade of blue.

They can't "fix" this. It's not exactly broken, it's just the downside of textures. When a texture artist wants his textures to be easily dyeable he has to draw it in grayscale.
Now to dye this texture, the game only has to apply the color to it's dyeable regions. The problem within this is, if you add add to much black, the texture will become useless, to a simple point where true black totally blanks out the texture. Same goes for true white, killing the details first and then slowly but steady the whole texture.
Keep in mind that it's even more complex with light, blooming and all the other effects of Guildwars. And some models that work a lot with transparency are even harder to maintain.
And also keep in mind that it is impossible to create persistency between two completely different textures when it comes to the white/black balance. Some parts just have to be made darker for it to work, but once you've made some parts darker, you'll have to adapt the others to it. And now? Well you now have to rework the first texture again to adapt it this time. Woops, that kills the details completely, now we have to rework those... damn, our second texture now isn't synched anymore, gotta rework that... damn, we messed the first again...
It's just impossible, trust someone who's been making Textures for a loooong time. As soon as texture are meant to be dyed without any steps inbetween, it's impossible to keep a persistency between different textures. Of course if you only offer someone like 2 colors per armor... it's quite easy to mix them right.
