It's generally accepted that, in order to qualify as a boss, a mob needs to have: An aura; a morale boost when killed; capturable skills. Anything that doesn't meet all these criteria is a boss-like foe.

Well, that's how the official wiki decided to categorise them, after much debate!

Early in Frostgate there is an unnamed minotaur boss.
