If I have someone on my Friends List & I am on his... if I remove that person from my list can they still tell if I am online or not?

Yes they can as long as they have you on their friends list. What you do with your friends list has no affect on the other guys account what so ever. His friends list is tied into his account and will only change if he decides to change it.

... and IF there is an issue with the person you are removing and do not want to communicate anymore, just use /ignore XXX
