Can you wear bits and pieces from different armor sets or are you forced to wear a comlete set? And can you wear parts of an armor set but not all of them (like say I didn't want my warrior to have one of those gay caps they wear called a helmit)?

You can mix and match any of the armor sets available to your primary profession all you want.
