What would you guys recommend as the fastest way to level? Should i stop and do all the mini quests? or save em till the end and just do coop mission runs?

I think the better question is "how do I get the most enjoyment out of the game?" and the answer is "don't level as fast as possible".

I agree with C-Tzar. The game levels you up if you let it.
