how do you switch 2ndary professions after you asend??

If you talk to Vanyi in Droknar's Forge, you'll get a quest that suggests you should go back to the three outposts in the Crystal Desert, and talk to the ghosts that are there. The ghosts offer you the quests that you need to undertake to change your secondary profession.

Is it possible to change more than once? Also, can you do all the quests before actually allowing them to switch your secondary profession?

you only have to do the subclass quest once

after that, you can change it unlimited number of times
