nope; only 1 at a time.

if you want to get a new pet; better leave your pet to the tamer then go get one.

if u want ur pet to tank for u... try to get it to follow the Playful --> Hearty evolution path for the additional HP

There are none. They attack what you attack. There are pet skills under the beastmastery line that you can use to buff them, etc.
