Hi.

What would I lose if I added an Insightful head to this staff???

I wanna change the armour to energy and keep the health. would this do it or do I need an insightful wrapping????

The head is always the first mod, the wrapping always the second.
In your staffs case, the head you have is the 'defensive' one, offering the +5 armor, the 'fortitude' mod is the wrapping.

So yes, if you add the insightful head, it will overwrite the +5 armor.
(note: there is no such thing as a insightful wrapping)
