Wiki says :

"Armor enhancing skills do not stack beyond +25 armor. This means a single skill can still bypass this cap, but using further armor enhancing skills will have no effect."

thats from skill, but does the armor enhancing from weapon/shield stack with armor enhancing from skill (eg Watch Yourself) beyond +25 ?

say Watch Yourself gives +20, shield gives +16 and sword pommel give +7, does it gives altogether +43 , or is it still capped at +25..?

As far as I know it only affects skill based armor boosts.

Armor enhancing skills don't stack beyond +25. Armor enhancement from weapons and shields are not counted as the effects of skills, so they do stack beyond the +25 limit imposed on skill effects.
