Would it be wise to sell presents a month or two after wintersday when the supply is VERY low and demand is HIGH like no ones business or should i just sell the cc shards I have now?

The items contained in the presents wont increase in value, so it doesnt really matter when you sell. However your cc shards are only good during this event.

And as Wintersday Presents CAN give you CCS's it's usually a good idea to open them all now, and use the CCS's with the wintersday gift giver to get more pressies.
