Let's see.

My Ele mostly collects dust. Never played much with her.
My Sin was the first character I leveled up, but I don't use her for much of anything.
My Dervish is my main, and the one I've done just about everything with.
My Rit I use the second-most (even though she hasn't completed a single campaign...oops), and is my farmer.

Personally, I don't care too much for Ele or Sin, they kind of bore me. Dervish is my favorite profession, and I love Rit as well.

You will rarely use the secondary profession on a Derv, btw. I generally just go /Mo by default as that's what I started with, but 95% of the time I do not have any secondary profession skills on my bar.

Just try them all out and see what you like, and what fits your playstyle.
