it must be easy, but how do you quickly swap weapons (for example, from a sword/shield to a bow)?

The default hotkeys are F1, F2, F3, F4. F1 is probably where you have your weapon now. If you press F2 your character will put his weapon away into the backpack and then you can equip a different weapon set. Once you equip different things in different F keys, rotate through them by pressing the appropriate key whenever you need to.

Or if you prefer you can just click the little icons at the bottom left of the screen that show the 4 different weapon slots.
