Necros make great protection monks. I'm not sure if you have them as full support, but what I like to do is make them hybrids and fill out the other halves with either curses or minions (depending on what you have to work with). You could certainly do interrupts, but it's more of an option. I generally find heroes can be a bit clumsy with them, so I don't rely too heavily. I focus more on hexes that shut down, like Mistrust.

In PvP, just play to your strengths. If you aren't good at interrupting, focus on conditions and degeneration. Crippling Shot or Pin Down are great, remember to cover cripple with another condition.

Just be aware of a sneaky skill called Assassin's Remedy, which can render conditions useless, even if you use Throw Dirt (blind). I'll not rant over that, but just be observant and focus on disabling people instead of killing them, since you respawn quickly in competitive missions. I haven't ever really strategized, I just pick a good target and make sure they don't do what they are trying to do.

In PvE, you donj't interrupt for the sake of interrupting. Interrupts are only used for its secondary effects. Common examples include Power Drain and Leech Signet for its energy return. Psychic Instability is used for its AoE knockdown. Panic is used to shutdown a mob. Don't worry about not having interrupts on heroes, albeit in general they interrupt better than you.

Wounding Strike can be captured quite early in EotN. You don't need other enchantments besides Aura of Holy Might (the Kurz/Lux one). If you're without a pet, Dwarven Stability is used to extend Lightning Reflexes, provide slight fuel for Mystic Sweep, and cover AoHM. The other enchantment you should put on a hero to cast on you is Strength of Honor. Put Splinter Weapon on a hero for a large AoE spike if you chain 3-4 scythe attacks.

In PvP, Rangers aren't exactly known for being damage dealers, but are great at pressuring and spreading poison and cripple.
