If I put a PC2100 DDR DIMM in a slot with a PC3200 DDR DIMM, will the board underclock the 3200 stick to match the 2100?

The PC2100 stick is 266Mhz and I think, would have to open my case to check at the moment, that the PC3200 is 333Mhz.

I received the PC2100 from an upgrade job and would like to know if it's worth reusing in my own comp.

Program called CPU-Z tells you what's inside your computer without having to open the case. Just google it.

Even tells you what month your RAM was made in lol

yes, your faster stick will run at the slower stick's speed.

Correct, but you should also take into account that mis-matching memory is not a good idea. Causes stability issues. If you're putting more than 1 stick of RAM in your computer, its a good idea to keep them the same size, speeds, and latency. You can buy matched sticks in various sizes, these are RAM modules that have been tested together before being shipped. OCZ, Corsair, and Kingston make some of the best quality sets.
