Default Are pets all the same?

Title pretty much says it all.

I was wondering if the "rare" pets everyone talks about are just status symbols, or do they actually perform differently in combat.

I took the M. Stalker you get initially in pre-searing and raised him to lvl 12 so far. Am I missing out on something?

No detailed facts for you sorry, although I think there may be some on the main web site here.
But basically I think they are all slightly different but roughly the same. Some pets attack faster but less damage etc. Some may 'proc' a special attack now and again but i think that is based on your beastmastery skill also.
So to sum up, if you have high beastmastery and a high level pet, then it does not matter which one you have, it is going to kick some serious butt

Pets do indeed differ. But I've never seen anyone put specifics on just how much and how. Not lately, anyway. Basically, though, like with a bow there are a few factors for each pet and where each differs from the baseline determines the characteristics of that pet. For bows, that's range, arc, a rate of fire. For pets it seems to be damage, rate of attack, and defense. Damage is, obviously, the damage your pet will do each attack. Rate of Attack is, obviously, just how fast the pet will attack. And defense is how much damge they'll take when attack - their AL, in so many words.

Now, there's a baseline there. A prototypical pet which is average iin all three catagories. Others can attack faster or hit harder or take less damage but they generally pay for that by being worse than the baseline pet in another catagory. So, say that being average is 0, being a step above average is +1, and being a step below is -1. Each pet has a zero sum (or close to it, anyway) after you total up just how far away from average in all directions they are. The problem is I'm not sure what the baseline pet is, whether levels affect that, whether Beastmastery afftects that, and the actual numbers. But, just like with weapons, pets can differ and finding the right pet can make you a lot more effective.
